Daddy's chocolate courgette cake


My dad is cutting down on sugar but still loves chocolate cake. This is one of his favourite recipes that allows him to 'have his cake - and eat it'

We bake this in a well buttered ring tin but it could be cooked as individual muffins.




180g ground almonds

30g of coconut flour (can use almond flour)

30g cocoa powder

1 tbsp baking powder

2 tsp cinnamon 

1 tbsp powdered sweetener

85g unsalted butter - melted

1 grated courgette

4 eggs

1 tsp vanilla essence 

50ml milk



60g butter

50g 90% Lindt dark chocolate - chopped

2 tbsp powdered sweetener

2 tbsp cocoa powder



Mix all the dry ingredients together in one bowl

Mix the wet ingredients together in one bowl

Mix the two bowls together gradually in the food mixer - mix well

Spread the lovely chocolate batter in the ring tin (or muffin tins) and bake for 35-40 mins (bit less if muffins) 150°C in a fan oven. Let cool for 15 mins, turn over the ring tin onto a plate and then glaze.

For the glaze, melt the butter and chocolate in the microwave (or over boiling water) and add the sweetener and cocoa powder. It takes a little while for the glaze to set.

The cake makes 16 slices and is lovely with Greek yogurt and berries - Eve Weeks
