2 Ingredient banana pancakes

Makes 4 small pancakes

Prep time: 5 mins

Cooking time: 8 mins

I’ve given one ingredient away – Banana …. The other is an egg.

Mash one ripe banana (really well) into one ‘beaten’ egg. It’s simple – so easy in fact, your parents could do it!

Then, heat a tsp of butter in a pan, add half the batter and fry. Then flip to fry the other side and repeat for the second pancake.

Tip – these pancakes do not flip as well as pancakes made with flour, you need to use a spatula to turn them over - if they are still too floppy, add a level tbsp of plain flour to the mix.  Serve with blueberries, strawberries or cherries – a bit of Greek Yogurt and even desiccated coconut to finishes things off!
